It looks like during the update of grub-efi-amd64-signed, only the unused /boot/efi/EFI/univention/grubx64.efi is updated but not the signed variant
/boot/efi/EFI/univention/grub.efi (the latter one is called by shim aka bootx64.efi).

It should be tested if this is the case. This would break automatic/errata updates (at least they get complicated).
