Overhaul mail server documentation to document Dovecot integration. Move Cyrus specifics into separate "extended documentation".

extended-docs/cyrus-4.0.xml re-uses the pictures from manual/illustrations40/.
For the file this works, but the PDF is broken since the pictures are missing during build.

The pictures must be copied and renamed, as we only have one common illustration40/ directory on the server (Bug #36987)
