The variables are now documented in the current UCC documentation.

 rdp/ignorecertificate
 rdp/geometry
 rdp/clienthostname


I didn't find ucc/pxe/timezone.

ucc/timezone is described in configuration.xml.

ucc/pxe/timezone is rather specific and can be described in UCS variable descriptions. I created Bug 30465 for that.
