There is no GUI option to defina a custom "Share Server" (like "create_ou --sharefileserver").

Bug 27549 will add an extended attribute for the "Class Share Server" at OU objects. So it may be changed easily in UCS@school 3.1.

I don't think, that this option is required in UMCs "add school" wizard. Most users will not use it and the import script (create_ou) will automatically configure the given school domaincontroller as share fileserver.
Changes may be made by modifying the corresponding OU object via UMC or CLI.
