Split from bug 31993 in order to move the packages "opendkim, opendkim-tools and postfix-policyd-spf-python" to maintained.

I adjusted the yamls because the release+scope were inconsistent:

What I tested:

activated unmaintained -> install opendkim, postfix-policyd-spf-python -> All packages that are installed from unmaintained now have a yaml -> OK

-> Verified
