UCS 5.0: Remove UCS 5.1 from available updates

The UMC module needs to ignore UCS 5.1. We do not want to give admins any chance of "accidentally" updating to a non-supported UCS version. We should also add a sentence in the UMC module explaining why a UCS 5.1 does not show up in the list of available versions (if it would have been available). The CLI may update to 5.1, though. We should not prevent anything here. But maybe we can adjust some texts, too? Will have to figure that out. This has to be part of UCS 5.0-5
